This recipe is lifted straight from my time at Zingerman’s Deli. It is quick and easy and basically foolproof as long as you don’t forget the baking powder– as I have done on several occasions. Use any fruit that is available: cherries, peaches, blueberries, raspberries and on and on and on. This recipe also scales up beautifully so if you need to make 4 hotel pans of cobbler, this dish is your friend.
- 2 pts fruit
- 1 C milk
- 1 C all purpose flour
- 1 C sugar
- 1 T baking powder
- pinch of salt
- 1 stick butter
- Heat oven to 350F
- In a large bowl whisk the flour, milk, sugar, baking powder and salt
- Place fruit in a 9×9 baking dish
- Pour batter over fruit
- Dot with butter all over especially in the edges. And don’t skimp, it shows.
- Bake until top is golden and batter is baked all the way through
