Wild Rice w/ Kohlrabi, Greens and Apple Chips

- 2 C wild rice, cooked and cooled
- 2 kohlrabi
- 1 bu kale
- 1/4 C apple cider vinegar
- 1 T honey
- 1/4 C olive oil
- 4 apple chips (or substitute fresh apples)
- salt and pepper
- Tip, tail and peel the kohlrabi and cut into matchsticks
- Strip the kale leaves, wash and cut into ribbons
- Sprinkle the kale with a pinch of salt and massage until dark green
- In a jar combine the vinegar, honey, olive oil and a big pinch of salt and shake till well combined
- In a medium bowl combine the rice, kohlrabi, greens, a good dash of the vinaigrette, and a pinch of salt and black pepper
- Taste and adjust seasoning
- Top with apple chips and serve
